Berry Bread Pudding

You can use your WIC benefits to create lots of healthy and delicious meals. With just a few ingredients, you can make this tasty bread berry pudding. Thanks to the blueberries, strawberries and raspberries, it’s packed with flavor. 

When you open the California WIC app, you can find all your monthly benefits that have been loaded to your WIC card.

Ingredients

  • 4 slices of whole wheat toast (1 inch cubes)*

  • 2 eggs*

  • 1/2 tablespoon vanilla extract

  • 2 1/2 tablespoons sugar

  • 1/2 cup vanilla low-fat yogurt*

  • 1/2 cup frozen blueberries (thawed)*

  • 1/2 cup frozen strawberries (thawed)*

*These items can be purchased using your WIC benefits.

Step-by-Step Instructions

  1. Pre-heat your oven to 350 degrees F.
  2. Chop the bread into about 1 inch cubes, and set aside.
  3. Add eggs, sugar, vanilla and vanilla yogurt into a medium bowl.
  4. Gently whisk together.
  5. Toss the bread cubes into the liquid mixture. Mix until all bread cubes are coated.
  6. Transfer the bread pudding mixture into a baking dish.
  7. Top the bread pudding mixture with the berries.
  8. Cover the baking dish with foil.
  9. Place in the pre-heated oven for 25 minutes.
  10. Remove the foil half-way through the bake time.
  11. Enjoy!
