Ingredients:

Avocado, sliced in half lengthwise

2 eggs

Salt and pepper

Your choice of toppings

Directions:

Preheat oven to 425°.

Scoop out about 2 Tbsp of avocado.  Place avocados in baking dish.

Crack 1 egg into each avocado half.  Season with salt and pepper.

Bake in oven for 15-20 minutes.

Garnish with any toppings you like!

Topping ideas:  chives, bacon bits, sliced tomato. sriracha
